Steps

Prick the potatoes with a fork several times. Place them in a microwave save bowl filled with water. Cover with bowl with a microwave lid and cook for 14- 15 minutes or until tender. |

Drain potatoes and allow it cool down for 5 minutes. |

In a small bowl, add Melted Butter, Olive Oil, minced garlic and herbs. Mix well and set it aside. |

Using your palm or back of a fork gently smash the potatoes in a way they are in one piece. |

Preheat the Microwave Oven to 180 C. On the baking sheet place the smashed potatoes , rosemary and garlic cloves, generously drizzle the herby mixture over them, sprinkle salt and pepper and bake for 15 minutes. |

Sprinkle a generous serving of grated parmesan or hard cheese on the potatoes and return the smashed potatoes to the Microwave Oven for 10-14 minutes until they melt and render a crispy texture on the top. |
