Soft, fluffy dough balls coated in cinnamon sugar and baked together into a golden, tear-and-share loaf. This Easter-style monkey bread is made from scratch, perfect for pulling apart at the table and finishing with a glossy glaze or dusting of sugar.

500g strong bread flour
50g caster sugar
7g dried yeast
1 tsp salt
300ml milk
50g unsalted butter melted
1 egg beaten
100g unsalted butter melted
150g brown sugar
2 tbsp ground cinnamon
butter forgreasing the dish

Steps

Preheat Panasonic Air Fry Combination Microwave Oven using the Convection function at 170°C.

Add the flour and sugar to the bowl of a stand mixer fitted with a dough hook, or mix together in a large bowl by hand.

Warm the milk until lukewarm, add the yeast and set aside for a few minutes until foamy.

Gently melt the 50g butter (for the dough), then remove from the heat and allow to cool slightly.

Add the salt to the flour mixture, then pour in the yeast mixture, the 50g melted butter and beaten egg.

Mix until a soft dough forms, then knead for 8–10 minutes until smooth and elastic.

Cover the dough and leave to rest for 1 hour, or until doubled in size.

Divide the dough into 30 g pieces and roll each into a smooth ball.

Combine the brown sugar and cinnamon in a bowl. Dip each dough ball into the separate 100g melted butter, then roll in the cinnamon sugar until well coated.

Generously grease a baking dish or bundt tin with softened or melted butter, then arrange the coated dough balls inside.

Allow the assembled dough to rest for 8 minutes at room temperature.

Place the bundt tin onto the enamel tray and cook using the Convection function at 170°C for 45 minutes or until risen, golden and cooked through.

Allow to cool slightly before turning out if using a bundt tin.
