Adjust Servings:
300g cauliflower
salt
black pepper
20g olive oil
50g peeled and diced onion
1l vegetable stock
120ml milk
for garnish fresh thyme
for garnish sourdough bread chunks

Steps

Cut the cauliflower into small pieces and transfer to a heatproof bowl. Season with salt and black pepper and drizzle some olive oil over the cauliflower. Add in the onions.

Use the STEAM function, (High) and touch the set key and select cooking time of 10 minutes. Touch START to steam the cauliflower and onions until soft.

Heat the vegetable stock and milk on stove. Add the cooked vegetables, vegetable stock and milk into the blender.

Blend the mixture until smooth, without any solid chunks. Garnish with fresh thyme and a pinch of black pepper. Serve with sourdough bread chunks as a meal.
TIP: Toast the bread chunks to get crispy croutons to go with the soup.
