Lamb with Potatoes and Roast Vegetables Recipe

Adjust Servings:
¼ hokkaido pumpkin
400g baby potatoes
1 courgette
1 red pepper
3 sprigs rosemary
1 onion
2 tbsp olive oil
2 cannon of lamb à ca. 160g
1 tbsp soft butter
15g panko breadcrumbs
2 tsp mustard
4 sprigs lemon thyme
2 sprigs flat leaf parsley
sea salt
pepper
1 tsp fruity vinegar
1 tsp black caraway seeds

Steps

Take the water tank out of the combi steam oven, fill it with water and place it back into the oven.

Wash and dry the pumpkin, potatoes, courgette, pepper und rosemary. Remove the rosemary leaves from the sprigs.

Peel the onion and slice it into strips. Core the pepper and the pumpkin. Slice the pepper, pumpkin and courgette.

Mix vegetables, potatoes, onion and rosemary in a bowl together with olive oil.

Put the wire rack on the enamel shelf and spread the vegetables on it. Place the Enamel shelf on the middle rack position of the Combi steam oven. Set „Steam 1“ to 18 minutes and press start.

Wash and dry the lamb.

For the crust, mix the butter with panko and mustard. Wash and dry the lemon thyme and parsley, pluck the leaves and chop finely. Thoroughly mix lemon thyme, parsley, sea salt and black pepper with the panko-mixture and spread it on top of the lamb.

When the vegetables are done, set „Grill 1“ to 8 minutes and start the program. When finished, remove the vegetables from the Combi steam oven and transfer them to a bowl. Season with vinegar, caraway seeds, sea salt and black pepper and keep them warm.

Place the lamb onto the wire rack. Put the wire rack on the enamel shelf. Place the Enamel shelf on the middle rack position of the Combi steam oven. Set „Steam 1“ to 5 minutes and start the program. Afterwards set „Grill 1“ to 4 minutes and press start. If you have a meat thermometer, a temperature of 55 °C means that the lamb is cooked medium rare/medium. According to personal taste, shorten or extend the cooking time.

Remove from the Combi steam oven and let the lamb rest for 5 minutes. Serve with the roasted vegetables.
