3/4 tsp active yeast
38g lukewarm water
125g egg whites
128g cottage cheese
291g bread flour
1 tbsp nutritional yeast
5g smoked salt

Steps

Insert the kneading blade into the bread pan.

Add the yeast and lukewarm water to the bottom of the pan.

Add egg whites and cottage cheese.

Top with bread flour, nutritional yeast, and smoked salt.

Insert the pan into the machine, close the lid, select Menu 4 – Whole Wheat, choose medium crust, and press Start.

Once the baking cycle is complete, carefully remove the bread pan, let rest for 10 minutes, then turn out the loaf onto a wire rack to cool completely.
