Crispy Chocolate and Praline Brioche Rolls Recipe

Adjust Servings:
250g flour
50g caster sugar
1 sachet of baking yeast
70ml plant based milk or cow's milk
30g water
1 egg
30g 100% cacao
60g butter
For the filling:
100g praline chocolate
approx. 10ml plant based milk
orange zest
almonds

NOTE: the recipe ingredient amounts are not suitable for the Mini Breadmaker SD-PN100

Steps

Add all the ingredients apart from the butter into the baking tin.

Mix everything using Menu 30 (kneading) for 20 minutes.

Add the cubed butter gradually and let the machine knead the dough until it is cohesive and not sticky.

Take the dough out of the machine. Place it in a bowl and leave it to rest at room temperature for 1 hour 30 mins, allowing the dough to proof.

Then prepare the filling by chopping up the chocolate into small pieces. Heat up the milk to boiling and add the chocolate. Stir gently to form a thick ganache. Allow to cool.

When the dough is ready, roll it out into a rectangle, add the filling but leave an empty strip of dough so it can be rolled up without the filling overflowing.

Roll the dough into a sausage shape and cut it into rolls with a sharp knife or wire.

Lay out the swirls on the lined baking tray. Leave it to rest for 30 minutes then glaze with egg (if needed). Garnish with grated orange zest on top.

Cook in the Panasonic Microwave Oven using the Combi 3 (Steam 1 + Grill 2) for 18 minutes.

Leave to cool.
