A wholesome, nutty loaf loaded with mixed seeds—perfect for slicing, toasting, or sandwiches. Made easily using the bread maker’s hands-off kneading and baking cycle.

LOAD SIZE S
2 1/4 tsp (4.2g) active dry yeast
250g strong whole wheat bread flour or mix 150g whole wheat + 100g white bread flour for a lighter loaf
1 tbsp brown sugar or honey
1/2 tsp salt
1 tbsp olive oil
180ml water room temperature
50g mixed seeds plus extra for topping
seed mix suggested

Steps

Lightly toast the seeds in a dry pan for 2–3 minutes until aromatic. Let cool.
(Suggested seed mix: sunflower seeds, pumpkin seeds, golden flaxseed, brown flaxseed, sesame seeds)

Insert the kneading blade into the breadpan.

Add the yeast to the bottom of the pan. Top with flour(s), sugar, and salt.

Add olive oil and water. Reserve the seeds for the “add-in” stage.

Insert the pan, close the lid, and select Menu 4 – Whole Wheat. Choose medium crust.

When the machine beeps for add-ins, open the lid and add the toasted seed mix. Close the lid and continue.

Once baking is complete, remove the loaf and cool on a wire rack.

Cook’s Note:
– For a seeded crust, brush the top with water and sprinkle extra seeds during the final rise (if your machine allows access before baking).
– Add 1 tbsp of oats to the seed mix if desired.
