These power bars are the ultimate healthy way to satisfy those chocolate cravings. The cherries and chocolate provide a delicious balance of sweet and sour. Sour cherries are a rich source of
health-promoting antioxidants called anthocyanins whilst providing significantly less sugar in comparison to sweet cherries. Cocoa nibs not only provide that chocolatey crunch but come with health benefits too. Known as ‘nature’s chocolate chips’, they are broken segments of cocoa beans with no additives such as sugar and fat. Cacao nibs provide minerals such as magnesium and iron. Alongside high-quality dark chocolate, they’re rich in plant chemicals called flavanols which have antioxidant properties and are under research for potential benefits for heart health and mood. Lastly, these bars are naturally sweetened with prunes which are high in fibre and good for the gut. All in all, these bars are a hit with adults and children alike.

1 1/2 ripe banana | |

Steps

Chop the banana into small chunks. Blitz the banana, oats and prunes in a food processor whilst leaving some texture. |

In a large bowl combine all of the ingredients. Line a baking tray with baking paper and spread over the mixture with a palette knife. |

Place in the Combi Oven and cook at 160°C for 50 minutes (check on bars a few times to ensure they do not burn). |

Once baked, leave to cool on a wire rack and then cut into bars. |
