Directions
When green salads get boring, swap it for this nutrient packed sweet potato and seed salad alternative. The pumpkin seeds and almonds add a nice crunch and the cranberries and pomegranate seeds are a delicious sweet balance to the zesty and tart vinaigrette dressing. This salad is wonderful as a side or own its own.

Steps

Peel and dice the sweet potatoes. |

Toss the sweet potato in olive oil with salt and pepper. |

Add to the air fryer and select the “Veggie” programme and cook for 10 minutes at 200°C. |

Shake the sweet potatoes in the basket and repeat cook time in Step 2. |

While the veggies are cooking, whisk together the dressing ingredients. |

Toss the sweet potato with the salad ingredients and dressing leaving aside the parsley and goat cheese. |

Add the salad to a large serving dish and top with dollops of goat cheese and sprinkle with parsley. |
