When green salads get boring, swap it for this nutrient packed sweet potato and seed salad alternative. The pumpkin seeds and almonds add a nice crunch and the cranberries and pomegranate seeds are a delicious sweet balance to the zesty and tart vinaigrette dressing. This salad is wonderful as a side or own its own.

Ingredients

Adjust Servings:
700g sweet potato peeled and diced
2 tbs olive oil
salt and pepper
For the Salad:
3 tbs sliced almonds
2 tbs dry cranberries
5 tbs fresh pomegranate seeds
2 tbs pumpkin seeds
1 tbs parsley chopped
50g soft goat cheese
For the Dressing:
60ml extra virgin olive oil
1 tbs apple cider vinegar
1 tbs balsamic vinegar
1 tsp orange zest
1 tbs orange juice
1 tsp fresh thyme
salt and pepper

Steps

Peel and dice the sweet potatoes.

Toss the sweet potato in olive oil with salt and pepper.

Add to the air fryer and select the “Veggie” programme and cook for 10 minutes at 200°C.

Shake the sweet potatoes in the basket and repeat cook time in Step 2.

While the veggies are cooking, whisk together the dressing ingredients.

Toss the sweet potato with the salad ingredients and dressing leaving aside the parsley and goat cheese.

Add the salad to a large serving dish and top with dollops of goat cheese and sprinkle with parsley.
