It’s Christmas time! Time to surprise your guests with these delicious snacks made with chocolate, cinnamon and mixed seeds. Sweet or salted? Pick your favorite or just make both!

Ingredients

Ingredients for German cinnamon star cookies
100g rye flour or almond flour
30g pastry flour
40g brown sugar
60g honey
30g butter
1 egg
1 tsp baking soda
a pinch of salt
the zest of half an orange
the zest of half a lemon
40g raw chopped almonds ideally ground
spice mix cinnamon, nutmeg, ginger
70g dark chocolate
70g white royal icing or make it yourself, see below
Ingredients for 15 saltines
200g pastry flour
100g cold butter
50ml fresh water
a pinch of salt
mixed seeds
For the icing (optional)
100g powdered sugar
2 tbsp milk / lemon juice / water

NOTE: the recipe ingredient amounts are not suitable for the Mini Breadmaker SD-PN100

German Cinnamon Star Cookies
For the biscuits, melt the butter in a pan with honey.
Let the mixture cool down.

In the meantime, pour the flours, the sugar, the egg, the baking soda and a pinch of salt into the breadmaker.

Add the mixture of butter and honey, the chopped almonds, the spices and the zests in the Breadmaker. Knead using the manual cake kneading programme for 10 minutes. Let it rest for 12 hours at room temperature.

Roll out the dough using a rolling pin on a lightly floured surface and form the cookies using pastry cutters.

Saltines
To prepare the saltines, add the flour, the butter, the water and a pinch of salt into the breadmaker. Knead the dough for 5 minutes using the manual bread dough programme. Let it rest for 30 minutes.

Roll out the dough using a rolling pin. Form the saltines using pastry cutters, brush them with a bit of water and add mixed seeds on the surface.

Bake the cinnamon star cookies and the saltines at 180° for 15 minutes or until golden.

Decorate the cinnamon star cookies with either icing or melted chocolate.

Optional: Making your own icing to decorate your cinnamon star cookies
In a small bowl, use a fork to beat together the powdered sugar and liquid. For a white icing, use milk. Alternatively, you can use water or lemon juice. The mixture should be very thick but still pourable. Add more powdered sugar as needed.

Transfer the icing to a squeeze bottle using a funnel or you can scoop it into a pastry bag fitted with a small plain tip.
Holding the bottle or bag tip directly over the cookie, begin squeezing gently and using both hands if needed to maintain consistent pressure.
