Ingredients

65ml warm water
2 1/4 tsp dry yeast
3 tbs sugar divided
320g bread flour
1 tsp salt
125ml milk
42g unsalted butter softened
1 tsp olive oil
1 egg lightly beaten
1 tsp sesame seeds

Steps

1

In a small bowl, mix the water with 1 tsp of the sugar. Once the sugar has mostly dissolved, sprinkle the yeast and stir lightly. Set aside for 5-10 minutes until the yeast has foamed and the mixture looks frothy.

2

In a large mixing bowl combine bread flour, sugar, and salt.

3

Add the yeast mixture and milk to the flour mixture and mix until it begins to come together.

4

Using your hands, slowly add the softened butter to the mixture, about a table spoon at a time, and start to knead together.

5

Once the mixture has come together, remove it from the bowl and place on a lightly floured surface. Knead for 10 minutes until the dough is smooth and a round ball is formed.

6

Rub the olive oil in the base and on the sides of a large bowl and place the dough inside.

7

Cover the bowl with a clean tea towel or cling film and set aside in a warm area for 1 hour 30 minutes until it has doubled in size.

8

Once proofed, remove the dough from the bowl, place on a lightly floured surface and divide into 12 equal pieces. Roll each piece into a round ball pulling together any creases. It is recommended to weigh each piece at this step.

9

Line the base of the air fryer with parchment paper and arrange the 12 dough balls in four rows of three so they are touching.

10

With the air fryer turned OFF, close the drawer and leave the dough for 1 hour to allow the dough to rise again.

11

Once the second rise is complete, open the drawer, brush with the egg wash and sprinkle with sesame seeds.

12

Turn on the air fryer and bake at 150°C for 20 minutes. No specific program setting is re-quired for this recipe.
