A nourishing, golden-hued soup with sweet potato, carrot, warming curry spices, turmeric and fresh ginger. Smooth, soothing and packed with anti-inflammatory goodness.

Adjust Servings:
250g sweet potato peeled and chopped
200g carrots peeled and chopped
1 garlic clove peeled
1 thumb-sized piece of fresh ginger sliced
1 tsp ground turmeric
1 tsp mild curry powder
200ml vegetable stock
1 tbsp olive oil
salt and pepper to taste

Steps

Add the sweet potato, carrots, garlic, ginger, turmeric, curry powder, vegetable stock, olive oil, salt and pepper to the jug of the Panasonic Blender & Soup Maker.

Turn the knob to the Smooth Soup setting and press Start.
Serve hot, optionally topped with yoghurt, seeds, or a swirl of coconut milk.
