A hearty one-basket tray bake inspired by the Sicilian pasta alla Norma. Juicy chicken thighs roasted with aubergine, tomatoes, garlic, and basil in the Panasonic Flex Air Fryer NF-BC1000. Finished with a sprinkle of parmesan for a rich Mediterranean family meal.

Ingredients

Adjust Servings:
2 tbsp olive oil
4 cloves garlic sliced
1 large aubergine cut into 2 cm cubes
200g cherry tomatoes
400g whole peeled tomatoes in juice
600g chicken thighs bone in, skin on
1 tsp dried oregano
salt and pepper
30g parmesan grated
10g fresh basil leaves

Steps

Remove the divider and the crisper plate from the Flex Air Fryer basket. Add the olive oil, garlic, aubergine, and cherry tomatoes. Season with oregano, salt, and pepper, and toss to coat.

Place the chicken thighs in between the vegetables. Set the Flex Air Fryer to Roast at 200°C and cook for 20 minutes.

Stir the vegetables gently, adding the canned tomatoes and then return to cook for a further 15 minutes on air fry at 220°C until the chicken is golden and cooked through and the aubergine is tender.

Sprinkle with parmesan and fresh basil before serving.
