If you are looking for a healthy one pot meal, look no further than this sea bass fillet and mediterranean veggie recipe which can all be simply made in the Panasonic air fryer basket. This recipe has a delicious medley of aubergine, courgette, peppers and red onion which will bring beautiful colour to your plate. Once the vegetables are cooked with the Panasonic “Veggie” program, by simply adding the sea bass on top, you will have dinner on the table quickly and a very easy washing up job after your meal.

Steps

Wash the veggies and cut the aubergine into dices, courgettes into rounds and red onion into wedges. |

In a large bowl, toss the aubergine, courgettes, roasted pepper and red onion in the olive oil with half the thyme leaves. |

Add the veggies to the air fryer basked and select the “Veggie” programme and cook for 10 minutes on 200°C. Shake the basket and repeat. |

While the veggies are cooking, pour the lemon juice over the sea bass and sprinkle with the remaining thyme leaves and salt and pepper to taste. |

When the veggies have finished the second round of cooking, place the fish on top of the veggies, skin side down. |

Select the “Seafood” setting and include the +water (gentle steam) function. Cook for 5-7 minutes on 180°C until the flesh of the fish is white and there are no translucent spots. |
