Thinly slice the mushrooms and onion. |

Put the butter into a pot, stir-fry the ingredients from step 1, sprinkle flour on top, add Vegetable stock, and simmer for 5 minutes. |

Blend with a hand blender, add salt and pepper, and pour into a bowl. |

Whip the milk with the hand blender, pour it onto the potage, float mushroom slices on top, and add coarsely ground pepper. |
